Brown Sugar, Garlic Chicken

4 boneless skinless chicken breasts

4 garlic cloves, minced

4 TB brown sugar

3 tsp olive oil

 

1. Preheat oven to 500 degrees and grease casserole dish

2. in a frying pan, saute the garlic in the olive oil until tender

3. Remove from heat and add the brown sugar

4. Place chicken in the pan and cover with the brown sugar/garlic mixture

5. Bake uncovered for 15 – 30 minutes

Crispy Herb Baked Chicken

This recipe I got off the back of a box of instant mashed potatoes… And just a heads up, this took about a half an hour longer to cook than the recipe called for! 😉

2/3 cup mashed potato flakes

1/3 cup grated Parmesan cheese

3/4 – 1 tsp garlic salt

1 (3 – 3 1/2 lb) cut up frying chicken, skinned

1/3 cup margarine or butter melted

 

1. Preheat oven to 350 degrees

2. Grease 9×13 pan

3. In a medium bowl, mix potato flakes, parmesan cheese, and garlic salt

4. stir until mixed well

5. Dip chicken pieces into margarine and roll in potato flake mixture to coat

6. Place in greased pan

7. Bake for 45 min – 1 hour or until chicken is fork-tender
