Creamy Honey Dipping Sauce

This pairs well with the Parmesan Crusted Chicken Bites

3/4 cup mayonnaise

3 TBS honey mustard

1 1/2 TBS honey

1 1/2 TBS milk

1/2 tsp salt

1/2 tsp apple cider vinegar

1/4 tsp ground black pepper

 

 

1. Combine all ingredients in a medium bowl.

2. Chill, if desired.

Chicken Vegetable Soup

I love a nice cup of hot soup while watching a football game on a cool Sunday afternoon! šŸ™‚

1 TBS oil

2 ribs celery, diagonally cut in 1/4″ – thick slices, should make 1 1/4 cups

1 onion shopped, should make 1 cup

2 small carrots, diagonally cut into 1/8″ thick slices , should make 3/4 cup

3 – 14 1/2 oz cans chicken broth with roasted vegetables and herbs

2 cups water

1 tsp poultry seasoning

1 – 17.5 oz fresh gnocchi

1 cup frozen peas, thawed

4 cups baby spinach

3 cups cooked shredded chicken

(biscuits – optional)

 

1. In a pot (I use a crock pot, but you can cook this over the stove as well) heat oil over medium

2. Add celery, onion and carrots; cook, stirring occasionally, until softened (5 -6 minutes)

3. Add water, broth, and seasoning

4. Bring to boil

5. Add gnocchi and peas

6. Reduce heat to medium; cook until gnocchi and vegetables are just tender (5 minutes).

7. Add spinach and chicken

8. Cook until chicken is heated through and spinach is wilted (1 minute)

(9. if desired, serve with biscuits)

Southwestern Pasta Casserole

12 oz ziti pasta

1 – 15 oz can chili

1 – 10 oz can mild enchilada sauce

1 – 4.5 oz can shopped green chiles

1/4 cup chopped fresh cilantro

1 1/4 cup shredded cheddar cheese

 

1. preheat oven to 350 degrees

2. Coat 2 1/4 quart baking dish with cooking spray

3. cook pasta according to directions; drain

4. In a large bowl, mix chili, enchilada sauce, chiles, cilantro and 1/2 cup of cheese

5. stir in cooked pasta and transfer to the baking dish

6. Cover the dish with foil and bake 45 minutes or until hot in the center

7. Remove from oven and sprinkle with the remaining cheese.

8. Bake 5 minutes or until cheese is melted and lightly browned.

9. Let cook 10 minutes before serving

11. Garnish with sour cream, cilantro, and hot peppers (if desired)

Sweet and Sour Meatballs

I haven’t tried this, but it sure sounds good!

Meatball:

2 lbs ground beef

1 – 14 oz can sweetened condensed milk

3/4 cup old-fashioned rolled oats

1/3 cup grated onion

1/2 tsp salt

1/4 tsp pepper

 

Sauce:

1 – 15 oz can tomato sauce

1 cup ketchup

1/4 cup packed light brown sugar

2 TBS Worcestershire sauce

2 TBS apple cider vinegar

 

1. Pre-heat oven to 350 degrees

2. In a large bowl, mix ground beef, sweetened condensed milk, old-fashioned rolled oats, grated onion, salt, and pepper

3. Combine into 32 meatballs

4. Place in an ungreased 13″ x 9″ baking dish

5. In a medium bowl, mix tomato sauce, ketchup, brown sugar, Worcestershire sauce, and vinegar

6. Pour sauce over meatballs

7. Bake 40 – 45 minutes or until no longer pink in the centers

8. Serve with rice or noodles

 

Brown Sugar, Garlic Chicken

4 boneless skinless chicken breasts

4 garlic cloves, minced

4 TB brown sugar

3 tsp olive oil

 

1. Preheat oven to 500 degrees and grease casserole dish

2. in a frying pan,Ā sauteĀ the garlic in the olive oil until tender

3. Remove from heat and add the brown sugar

4. Place chicken in the pan and cover with the brown sugar/garlic mixture

5. Bake uncovered for 15 – 30 minutes

CROCK POT Mississippi Roast

This makes an AMAZING sauce

Chuck Roast (or any – though I tried this with a pork roast and it was a little dry)

1 stick butter/margarine

1 packet ranch mix

1 packet au jus gravy mix

pepperoncini

 

1. put roast in crock pot

2. sprinkle ranch mix on top

3. sprinkle au jus mix on top

4. put a stick of butter on top

5. place 5 or 6 peppercini on top

6. cook on low for 6-8 hours

 

BBQ Ribs – Kansas City Rub

This is just the rub for the meat, not a recipe for the ribs or even the sauce…

1. Mix together the following:

1/2 cup brown sugar – packed

1/4 cup paprika

1 TB black pepper

1 TB salt

1 TB chili powder

1 TB garlic powder

1 TB onion powder

1 tsp cayenne pepper

 

2. sprinkle onto the ribs and rub in

3. let marinate in seasonings for a minimum of three hours before cooking

 

CROCK POT Cheesy Broccoli Meatloaf

*Note – for this recipe, you can chop the broccoli small enough that kids won’t notice it, but will still get the benefits of eating vegetables. Also, I would double the amount of cheese, as it was barelyĀ noticeableĀ  using the amount that the recipe calls for.

 

 

1. Mix the following together:

2 lbs ground beef

3 TBĀ WorcesterĀ sauce

1/2 TB salt

1 TB pepper

1 tsp italian seasoning

1 cup cooked broccoli – chopped

1 cup shredded cheddar cheese

1 cup bread crumbs

1 beaten egg

 

2. form into a loaf

3. line the inside of your crock pot with foil for easy cleanup

4. put the loaf into the crock pot and cover with ketchup

5. cook on low for 6-8 hours

 

 

Crispy Herb Baked Chicken

This recipe I got off the back of a box of instant mashed potatoes… And just a heads up, this took about a half an hour longer to cook than the recipe called for! šŸ˜‰

2/3 cup mashed potato flakes

1/3 cup gratedĀ ParmesanĀ cheese

3/4 – 1 tsp garlic salt

1 (3 – 3 1/2 lb) cut up frying chicken, skinned

1/3 cup margarine or butter melted

 

1. Preheat oven to 350 degrees

2. Grease 9×13 pan

3. In a medium bowl, mix potato flakes, parmesan cheese, and garlic salt

4. stir until mixed well

5. Dip chicken pieces into margarine and roll in potato flake mixture to coat

6. Place in greased pan

7. Bake for 45 min – 1 hour or until chicken is fork-tender

Chicken Ramen Noodles

Okay, so this is my own creation. I used to make this a lot when I was in college because it was cheap, easy, and relatively filling.

2 chicken breasts

1 packet chicken flavored ramen noodles

butter

garlic

salt

grated parmesan cheese

 

1. Sprinkle garlic, salt, and chicken seasoning (from the noodle package) on both sides of the chicken and rub in.

2. Cut chicken into 1 inch chunks

3. place a TB of butter into a skillet and allow to melt

4. Add chicken and cook until done

5. Meanwhile, boil water for noodles

6. Add noodles and continue boiling until noddles float and are cooked through; strain

7. return noodles to saucepan; add 2 TB butter, chicken, and approximately 1/3 cup of parmesan cheese; garlic to taste; mix well.
